The cherry of the Marina Alta is cultivated by hand in the valleys of the interior of the region, where the tree finds the ideal conditions to give its best fruit. It is a rainfed crop in highlands, which benefits from the mild climate that gives it its proximity to the sea. Vall de Gallinera is recognized as a Protected Geographical Indication.
The fields of cherries are terraced and extend through a territory of mountains and valleys.
The stage of flowering, maturation and collection is between March and June and gives this space an image of great beauty. The cultivation and collection is done by hand, without the use of heavy machinery.
In the kitchen, cherry is a product traditionally associated with sweets. Natural, sugary, in jam or syrup, is an ingredient present in cakes, biscuits and ice cream. In other elaborations we can find the cherry in soups and fresh gazpachos, pairing cheeses, filling meats or sauces and as a side dish in game dishes.
The sweet cherry, juicy and well fleshy, is a seasonal fruit that in addition to good, identifies our heritage and provides the freshness that only has a product of proximity.
